When I studied physiology at University salt level control in the system was (and still is) considered to be a homeostatic mechanism. The body retains sodium when levels are low and the kidneys excrete it when high, hence it matters not how much salt you ingest as long as you have enough. The only general exception, therefore is in case of kidney malfunction (old geezers like me tend to have reduced kidney function) or the very rare cases which, as you mention, might be hereditary. "They" (the PC fascists) realise that it is much easier to force people to do what they want if they keep it simple. "They" do not care a damn about the accuracy of their information or the fact they they ruin the enjoyment of food for everyone. As always "Moderatio in omnibus" (1) applies.
