Sounds like you're taking your diet seriously :)
My aunt and her husband are both diabetic and I cringe when I see them 
eating food with a high glycemic index.

Gluten free recipes usually use almond flour.
Pumpkin spice = cinnamon, ginger, nutmeg, cloves, allspice (if you make 
it yourself). Also contains stuff like silicon dioxide if store-bought.
