And if you were to say "I will add large capacitors to these here rails",
the phase margin of the PSU regulation control loop cannot withstand more than
about 5000uF total capacitance per rail. The specification for this is not on any
web site, but usually an email inquiry to engineering will cough up a number.
The symptoms would be low-frequency, full-amplitude oscillation of
the power supply, if an excess of capacitive loading was applied.

Sites like JonnyGuru, would have oscilloscope pictures and
measurements for the supplies they review. They also have
professional PSU tester equipment for load testing, or
for, say, transient step response.

Generally, the price of supplies, would tell you how closely
they "hug" the limits of the ATX spec.

The PSU industry is all the time doing strange stuff. For example,
a number of years ago, the "holdup time spec" for the main capacitor
in the supply started to drop in value. And this parameter ensures
a cheap UPS can switch to battery, without the PSU glitching the
outputs. So that's yet another thing to check, that really should
not have gone downhill over the years. It used to be, you didn't
even need to verify the value. It just worked.
