No, I haven't.  Assuming this is doable when editing the memo field, how 
does one access that in the edit panel for the memo field in the 
transaction?

I can do this thru a round-about way of bringing up the symbol on some 
other general internet page 
(https://european-union.europa.eu/institutions-law-budget/euro/design_en 
is a good one), then simply copy and paste the symbol from that page to 
my memo field ("€"), but I figure there's got to be a single step 
process for this.)
