If it isn’t a signed application. Changing the Info.plist should work but I’m not sure what differences you’re seeing. Looking at a new one of mine I’m not seeing any obvious way to change java options either. If you’re ok with not signed or have your own OS/X developer signing cert’s you could probably jpackage your own version of the application. Make sure you include as input anything you see in the ‘app’ directory.
