If this is the jpackage OS/X now changing the Info.plist might not be a good idea as it could break the application signature. Not sure on that I haven’t tried it that I remember. It might work.

But it might be better to figure out how to command line or shell script launch and then changing the memory that way. Not sure exactly the best way to do that but someone could probably tell you.

If it isn’t a signed application. Changing the  Info.plist should work but I’m not sure what differences you’re seeing. Looking at a new one of mine I’m not seeing any obvious way to change java options either. 

If you’re ok with not signed or have your own OS/X developer signing cert’s you could probably jpackage your own version of the application. Make sure you include as input anything you see in the ‘app’ directory. For your own use I’m assuming that would be ok.
