I don't know about the robustness of the FAT or NTFS implementations on Linux. In general: all problems if present are caused by the OS. It is well known, that the Linux FAT implementation breaks character cases when doing a restore in case that a file name is all upper case. Star knowns that the time resolution may only be 2 seconds (FAT). You need to e.g. find out what happens on Linux with a FAT file with date Y 2106.
