What format you rip to (FLAC, MP3, AAC, etc.) is irrelevant with regards to AccurateRip. What AccurateRip does is verify that the audio you extracted is error-free.
All extracted audio is uncompressed, 44.1kHz, 16 bit, 2 channel. You can choose the type of files EAC writes, but that’s done after the audio is extracted. If there are errors in the audio when it is extracted, those errors will be manifested in the final output files, regardless of format..
By analogy, suppose you have OCR software that makes one or more errors converting an image to text. It doesn’t matter if the OCR software is set to write a text file, Microsoft Word file, or an Apple Pages file; the error, if not caught and corrected, will appear in the output file.
