The EAC changes to the Compression options window doesn’t have anything to do with matching different versions of FLAC, so don’t let that bother you.

That’s the compression level, which varies between 0 and 8. Higher numbers = greater compression at the cost of more CPU usage. With the performance of modern CPUs, choosing the best compression isn’t likely to result in compression that seems slow to complete. It’s your call. You can experiment, but I would start with 8 and if that’s fast enough, leave it there in order to conserve disc space.
