I have an EWI USB but haven't pulled it out since getting Logic. You might want to map the breath controller CC to a resonance filter/volume filter. Also, you don't want to have velocity sensing active (if you blow and the WX sends the velocity as 75- you are then stuck at that volume and can't increase/decrease with breath pressure- that filtering technique is what will emulate that by filtering the volument based on breath).
