For you need, RAID 0 will give you the performance with no fault tolerance. RAID 1 will give you the mirroring that you're looking for, with lower performance. RAID 7 seems to provide the best 'read/write' performance with fault tolerance but it's not an open standard, which means that you'd have to buy a proprietary controller.
