Different sources have different ways of doing that. For example, 
ezstream (which I use to send live mp3 streams) lets you specify a 
program in the config file that returns the metadata info and gets run 
whenever you send the program a SIGUSR2. I don't think there's any way 
for icecast to insert metadata into a mountpoint though - it has to be 
sent by the source.
