But SpeakFreely's Text Chat is not encrypted (dunno why).

If you trust closed source software, on a Windows platform you could use
Skype's text chat feature (www.skype.com). Otherwise, you may try WASTE
(http://grazzy.mjoelkbar.net/waste/ ) or Invisible IRC
(http://www.invisiblenet.net/iip/index.php ).
