works fine here (sc3.10.4).  for example moving and linking the Extensions folder...
mv .local/share/SuperCollider/Extensions my_classes
ln -s my_classes .local/share/SuperCollider/Extensions

but a better way is to just add your path to .config/SuperCollider/sclang_conf.yaml
you can also add paths directly in the IDE under Edit/Preferences/Interpreter
same thing.
