Backing up to USB disks - Archival of data?

Hi! What is the best or recommended process here? Ie if we back up to externa USB disks and want to replace the disk every now and then and keep the old as an archival copy? Assuming that we then want to restore a file from an old disk, that was disconnected three months ago.
