I can confirm that this method works (My production setup currently has 4 domains using the same database). I have a few warnings involving not sharing the data directory. Any template changes you do require a ./checksetup.pl run for each PROJECT. Also, if you have Bugzilla configured to store attachments locally, you will run into problems when accessing a bug from a host other than the one the bug was added in. I can, however, confirm that replacing the attachments directory in all but one setup with a symbolic link to the remaining setup and configuring apache to accept symlink read/write eliminates that problem entirely.
