A little more research:

select TABLE_NAME, COLUMN_NAME, CHARACTER_SET_NAME, COLLATION_NAME from
INFORMATION_SCHEMA.COLUMNS where TABLE_NAME =
'mantis_project_category_table'

TABLE_NAME                     COLUMN_NAME  CHARACTER_SET_NAME
COLLATION_NAME
mantis_project_category_table  category     iso_1
SQL_Latin1_General_CP1_CI_AS

mantis_project_category_table  project_id   NULL                NULL

mantis_project_category_table  user_id      NULL                NULL

Why is category the only column in the table with char_set_name or
collation_name?
