You just need to set the value of $g_from_name variable in config_inc.php, like

$g_from_name = "The text you want to be displayed in the from field of
the e-mail message"

When setting up e-mail preferences, I also recommend you to set custom
values to the variables:

  $g_administrator_email
  $g_webmaster_email
  $g_from_email
  $g_return_path_email
