I assume you have tested UTF-8 mails, which indeed work fine with characters from various languages. But for Japanese there are the Shift_JIS (aka sjis), ISO-2022-JP and EUC-JP encodings, and I assume there are similar encodings for Chinese and Korean characters. This needs to be tested, too.
