You can use the form protection built into FarCry Core.  Just add
bSpamProtect="true" to your processform.cfm tag to enable
cfformprotection.  Go to the Admin > Configs > Form Protection config
to adjust how this behaviour works.

I was sure there was a tutorial about this somewhere, but I can't find
it for the life of me.
