Please refer to chapter 12 of the Template Guide:
http://www.jahia.org/jahia/webdav/site/jahia_org/shared/documentation/template/Draft_Jahia_Template_Developer_Guide_v0.3.pdf
or the Lucene syntax:http://lucene.apache.org/java/docs/queryparsersyntax.html

All the Jahia fields are independently indexed and several other properties
(mode, language,...). So you can make easily make some complex requests on
top of Lucene...

Finally, you may use any other web crawler on top of Jahia (e.g. Nutch).
But this will not index hidden Jahia metadata, confidential pages, pages in
various stages, etc.. Lucene was deeply integrated in order to
automatically index all the Jahia content objects whatever their states,
permissions, etc are. So you may try to replace it (with what?) but this
will be a bit more complex (but the source code is of course available if
you want to take a look).

Cheers,
Stéphane
