Arnaud, Jahia currently caches on a per-page basis so you cannot have different cache behaviours for different sections of a page. Note that the upcoming version 5.0 of Jahia will support advanced page fragment caching using via ESI (www.esi.org <http://www.esi.org/> ). In the meantime, I suggest you use the OSCache taglib (http://www.opensymphony.com/oscache/wiki/JSP%20Tags.html) which should fulfill your needs.
