I'm using it on a daily basis (and I used it to make all my tests of the 
4.0.5) without any issue (excepted that it fails to load automatically the 
first page after the config wizard or after reboot and you have to click on 
refresh in your browser but excepted this (very) minor point we have not 
currently solved, it's fine).

Jahia is not dependant of the OS but of the JDK implementation (thanks 
Java/J2EE ;-) ). So should works fine.

As far as I'm concerned I would use a Linux server. It is more easy to 
manage remotely (and of course less costly). Now such a choice is more up 
to the sysadmin skills you have internally. If you have no experience with 
Linux, seems better to use a windows server...
