This depends on the current checkin state of the document. If the 
document is checked out (using the WebUI), information is just stored 
in the editing area and a new version is only created if you release 
the document (again using the WebUI).

If the document is not checked out, it should create a new version on 
each save - not sure (could also just checkout the current version, 
just give it a try). Note that this can have weird interactions with 
the autosave functionality of MS Office (which is why it might be 
disabled in the current builds).
