I thought the apache error log was available in cPanel somewhere, not used it for a long time though...

Did you get my reply about the out of date composer.json or lock file following your screenies of the terminal?

However, that composer install in setup.sh, inside vendor_bundled is for the packages that come with tiki, not the extra ones installed by the package manager feature, to try that on the command line try:

    php temp/composer.phar install

and see what happens?
