Assuming php is configured correctly you should be able to just leave
"Default method to send mail" set at "Mail". Failing that set it at "SMTP",
click Update, put in your SMTP server info, and Update again. Or you could
even download binaries for windows that mimic sendmail, add them to your
path, and choose "SendMail" as the option.
