In the blocks admin bit click edit on the menu block.

The default menu just lists all modules using the "display modules" option.
It is envisaged for production sites that the admin would unselect that 
option and setup their own menu using the custom menu section of that block.

Note that "display modules" is either on or off - there is no way to 
include or exclude specific modules.
