hmm, this means you use many different operating system images / virtual 
machines for each zms version?

Why not using different zope / zms / python installations on the same 
machine / system? I do this under Linux and netBSD since several years. Not 
all distributions allow different zope installations by their package 
management, but in that case you can do manual installs into different pathes 
on your filesystem (like /usr/local/zope/2.8 /usr/local/2.10). 

As usual your different zope-instances on the same machine just have to use a 
different port-base (zope.conf) to avoid port collisions.

I.e. Gentoo Linux, and the BSDs allowing parallel installs by default from 
their package / ports management.

As Parallels seems to be Mac OSX and Mac OSX is Unix-like it should be easy to 
install zope manually in such a wise (at least manual) too - nut may be into 
another path (like somewhere into your home dir).

May be this should allows "quasi automatic" upgrades of ZMS instances by a 
script which is going through the whole update path by a python script too - 
but i never tried this. If someone worked out such a script i would be very 
interested too...
