Use of ampersand (&) within string

We have an income code in our Payroll system for Time and Expenses = 'T&E'

I cannot seem to find a way to tell TOAD that that ampersand is part of the string I want to search in an SQL (not PL/SQL) session.  I know that I can do this with SQL*Plus by using SET DEFINE <some_non_ampersand_character> but I do not see a way to do it with TOAD.

Can you help?
