I wouldn't have thought it would be common to shift-click by accident. My most hated accident in a file manager is Windows' hover-to-select. It almost makes the single click option unusable. I think the most straightforward definition of "between" would be everything between the farthest selected item from the pointer and the item under the pointer in the current sort order.
