My survey paper ``Fast multiplication and its applications'' is now
available from http://cr.yp.to/papers.html#multapps. This paper

   * explains how various arithmetic operations on polynomials, power
     series, integers, real numbers, and 2-adic numbers can be performed
     in essentially linear time;

   * explains all sorts of speedups---not computer-architecture issues,
     but pretty much every known algebraic technique to save time for
     FFT-sized inputs; and

   * discusses the history in detail.

Let me know if I've missed any tricks or omitted any relevant part of
the literature; I want this paper to be a comprehensive one-stop shop
for people interested in the topic.
