What version of Hercules should I build for Mac?

I'm trying to build Hercules on macOS, but I'm confused about which version I should be using. I started with hercules-3.07, but then found a link to hyperion which is apparently Hercules version 4, but then found spinduck, and I can't get any of them to build. I suspect I've headed off in the wrong direction, so I wanted to check what's the "right" version to build and which instructions I should follow.
