Both of them are valid and both of them will exist in the future.

IRC is a more real-time communication system. If you are lucky, and a person who can answer your questions is sitting at their computer, it is easy to have a quick back and forth communication. On the other hand, in plain IRC you don't see messages that are sent while you are offline (*).

Mails to the mailing list are stored and delivered later, so someone who is currently on vacation can see it in 3 weeks.

Both have their place, and will continue to be used by the Wine project. Although I must admit I look less and less at IRC messages, in particular since my employer switched its internal communications to Matrix. Now my IRC client is an extra program I have to start up and often forget about.

I hope this provides some clarification.

(*): There are separate tools like ZNC that can store IRC messages for you while your computer is off, but they need separate setup.
