* doc: document GNUTLS_PIN and GNUTLS_SO_PIN environment variables

Document that gnutls-cli and similar tools can accept PIN via
GNUTLS_PIN (user PIN) and GNUTLS_SO_PIN (security officer PIN)
environment variables. This is implemented by the default PIN
callback in the command-line tools.
