None of the patches are important or necessary. You can simply build Okular as 
released by KDE (e.g. 25.12.x) yourself.

If you want to build a Qt5-based Okular then you need to use the
work/sune/WORK branch of https://invent.kde.org/graphics/okular/
and the branch WORK branch of Sune's fork of poppler:
https://gitlab.freedesktop.org/svuorela/poppler.git
