Select a planet with orbiting ships. Select the Show Ship Info menu item and
it will show the individual ships in the info window at the bottom of the
screen. This was put in to make it easier to select planets and get to the
ships without having to try to click on such a small ship icon on the main
screen. if you are able to select the ship icon on the main screen, then
this menu item is not that useful for you.

No. once a ship has been given orders and the turn ended there is no way to
change the orders until it arrives.
