By chance I reinstalled GKrellM on OS X when I had a disk in my CD/DVD
drive and it properly identified the HD and CD/DVD and my HD graph shows
HD activity now. The disk settings above were from when it was not
working; the settings below after reinstalling with a disk in the CD/DVD
work great now:

disk assign_method 2
disk device Disk 0 0 0 0 0 0 0
disk chart_config Disk 40 30 0 1 0 0 : 0 0 0 0 500 : 0 0 0 0 500
disk device MATSHITA_DVD-R_UJ-825_Media 0 0 -1 0 1 -1 0
disk device FUJITSU_MHT2080AT_Media 0 0 -1 1 1 -1 0
disk chart_config FUJITSU_MHT2080AT_Media 40 2000 0 1 0 0 : 0 0 0 0 500 :
0 0 0 0 500
disk text_format $T
