Hi,

You mention two problems.

One is you do not see your camera, cf. your log:

Overlay Capabilities
The only advice I have is to look at 
https://bugzilla.gnome.org/show_bug.cgi?id=626515#c44 (comment 44) to 
see if it helps.

The other is you have a greyed menu.  This is normal, since no one is 
calling you (Pick up), and you are not in communication phase (Hangup, 
Hold Call etc.)
