Did you read through the wiki link David provided?

All three of those are in GNC_DATA_HOME per the Files section of that page.

Scrolling above that where the locations are defined, GNC_DATA_HOME is a 
sub-directory of USER_DATA_HOME, thus copy those relevant (or all) files 
from the original location:

$HOME/.local/share/gnucash

to the Flatpak location:

$HOME/.var/app/org.gnucash.GnuCash/data/gnucash

But that wiki page is much more complete of a reference with details and 
nuances.
