MrProject currently depends on GNOME which is much more than just GTK2
so you would have to port significant parts of the GNOME desktop to
Win32 aswell. This might be doable but probably will require large
amounts of time.

As for your switch to OSS Desktops, have you seen the Ximian Connector?
http://www.ximian.com/products/connector/

It allows you to use Evolution together with your Microsoft Exchange
server.
