Saving in Latin-1?

Hello,

I would like to know if theres a way to save Bibtex files in Latin-1 
instead default Latex format.
May be this could be one option in future releases.
The reason is this is better for direct editing of bib files, and
usefull for exporting for non bibtext managers like EndNote.
