I'll post back to let you know how I got on. MonoMac is the precursor to Xamarin.Mac. You should use Xamarin.Mac. If you get the Starter edition of Xamarin Studio, it'll include Xam.Mac, but the limitation is a small app size. And maybe a restriction prohibiting distribution to the app store (I'm not sure).
