What kind of stuff do you want to work on?
There is a whole bunch of things that people need help with listed on 
this page: http://live.gnome.org/GnomeArt/ArtRequests

If you want to contribute to a specific application, with say, some 
nicer graphics (like a icon or similar), contact the maintainer and show 
them your improvements (or ask for help on this list or in the irc 
channel #gnome-art on irc.gimpnet.org if you need help with getting 
started).

There are also a bunch of tutorials and links to important places listed 
on art.gnome.org.
