I'm not entirely clear what you're trying to do, but there's some
possible confusion over what use of "remote servers" is possible.

The Red Carpet GUI (red-carpet) can be used to connect to red carpet
daemons (rcd) on other machines.  The Red Carpet servers which can be
used are generally limited to Ximian's servers and official mirrors. 
That is, you can't set up your own Red Carpet server (unless you buy Red
Carpet Enterprise).

If all you want to do is mirror packages so that you don't need to
download the same updates n times for n machines (running the same
version of the same distro), you can probably get by with setting up rcd
to use a proxy.

If all you're trying to do is connect the GUI to an rcd on a remote
machine (which you call a "server" since it's dedicated to running e.g.
httpd, while I see it as a "client" since it's connecting to a Red
Carpet server), please clarify and provide as much detail as possible. 
It might also be useful to read the rcd man page (especially about the
-p flag; I'm not sure whether -p or -r is in effect by default).

FWIW, I haven't tried connecting local Red Carpet to remote rcd; I
generally have Red Carpet installed on remote machines (which have X
libraries installed) and adjust DISPLAY as needed if I want to display
it on a remote machine.  I think the connect-to-remote-rcd functionality
is intended mostly to make the requirement of X libraries on the remote
machine unnecessary, but I seldom have to deal with that case.
