I expect that evolution would use the home directory specified
in /etc/passwd for the user in question.  Yes, it's designed to be
single-user only.  Having multiple users sharing data would pose serious
data integrity issues.  Shared data requires some infrastructure for
handling concurrent access without risk to data integrity (e.g. an LDAP
server for addressbook data).
