Different versions will have different backup/restore instructions. 1) Quit Evolution and run "evolution --force-shutdown". This kills any evo-related background processes and commits all state to disk. 2) tar up your ~/evolution and ~/.gconf/apps/evolution directories. 3) untar them on the new machine. Caveat: life is easiest if you have the same username and uid on the new machine as on the old machine. If your uid changed, you'll want to chown the relevant files. If your username changed, you'll need to modify your filters, since they'll have paths defined by the previous value of ~.
