This depends on the apps you are using. Gnome and KDE apps don't share
such setting -- the same for other applications like Mozilla and
OpenOffice.org.


Setting the default Mail Client: *Gnome*

  Gnome Control Center / Advanced / Preferred Applications / Mail Reader
  or just run 'gnome-default-applications-properties' from a terminal.

Setting the default Mail Client: *Mozilla*

  Install the plugin from http://mozex.mozdev.org/ and configure mozex:
  Edit / Preferences / mozex
    Intercept clicks:  [x] mailto
    Mailer:            evolution-1.5 %r

Firefox probably either works with the Mozilla plugin or has a setting
already built-in. Please check the Firefox settings.

Other apps like Opera so have similar settings, although I don't
remember ATM.

Regarding your KDE apps, please refer to the KDE Settings.

Anything mentioned above does apply here in a similar way: Gnome and KDE
don't share the setting for the default browser.

Thus you will have to set the Gnome setting according to the KDE
setting, as Evolution only knows about the Gnome wide settings:

  Gnome Control Center / Advanced / Preferred Applications / Web Browser
  or just run 'gnome-default-applications-properties' from a terminal.
