Wrapping at 72 chars actually is the default for plain text (aka non-
HTML) mails by Evolution.


You did not mention, if it wraps at all and which version you are using.
*sigh* So there are multiple possibilities:

- The composer does know different paragraph styles even when using
text/plain. Be sure to use Format / Heading / Normal rather than
Preformat.

- Be sure to compose plain text mails. HTML mails won't be wrapped, due
to the nature of HTML. (You can set the default in the Settings.)

- When composing plain text mails, you need to set the used font to a
non-proportional one. Proportional fonts will result in strange display
while compiling but will be sent just fine.

- If the text is wrapped too early each line and all the above are
correct, you should try a smaller font size. Like above a too large font
can result in display strangeness, as it will wrap at the Composer
border.
