I use 1 for tablets (one page at a time) rendering which I think is a nice
addition for musicians.
Obviously 2 for two pages facing each-other.

I came across 3 pages(-at-a-time) scores from time to time. Especially in
keyboard music but also once on double bass.

I guess not really. Side anecdote : Back in college, the standard practice
(in pop music😱) was to scotch tape the whole score in one linear
horizontal reading. 1|2|3|4|5|6 and you would let the part hang from both
sides of the music stand, tossing it from side to side hoping it would not
drag itself off the stand.
