Hi Swayne, I'm the original author of the Hershey Text extension. I've been rewriting Hershey Text with some major changes and a new version is almost ready. (See https://gitlab.com/inkscape/extensions/merge_requests/25#note_145678292 for discussion.) The changes that are underway do not overlap with the ideas of generating handwriting fonts from PDF documents, and I expect the current set of changes to be complete (and ready for you to build upon) by the GSoC start date.
