You can either fiddle with the print scale in the Page Setup dialog (which is the same thing, just a bit more hidden), or check the "Print canvas on one printer sheet" box in the Canvas Size Inspector, which will take any multiple page canvas and print it out on one page. We removed the "Fit" button because using it could allow different print scales per document, which was thought of as a bad thing™.
